Here's an easy recipe for these colder days that is cheap, can be made upto three days in advance and is a great accompaniment with roast meats.

Slow Cooked Spiced Red Cabbage

Ingredients:


1 red cabbage,shredded
1 Bramley apple, peeled and coarsely grated
1 red onion, sliced
2tbsp balsamic vinegar
Glass of port
3tbsp dark muscovado sugar
2tsp Chinese 5 spice powder
1 cinnamon stick, remove before serving
100g butter, cut into cubes.

Method


Heat oven to 150˚C (fan 130˚C), gas 2. Put all ingredients into ovenproof and hob-friendly casserole dish with lid.


Put on heat, stir well then cook on medium heat until butter is melted and everything is well mixed for about 5 minutes. Cover,transfer to oven and cook for about 2 hours.


Remove from oven and season to taste. If prepared earlier, reheat thoroughly before serving.
