Sour Chickpeas

Ingredients
350g chickpeas, washed and drained
1.75ltr water
300g onions,finely chopped
2.5tsp salt
1 fresh chilli,finely chopped
1tbsp peeled fresh ginger,finely grated
4tbsp lemon juice
6tbsp vegetable oil
225g finely chopped tomatoes
1tbsp ground coriander seeds
1tbsp ground cumin seeds
0.5tsp ground turmeric
2tsp garam masala
0.25tsp cayenne pepper.


Soak chickpeas in water for a whole day (24 hours). Put peas and liquid into large pan and bring to boil.


Put on lid, lower heat,simmer gently for about 1hr30min or until tender. Strain and save liquid.


Put 2 tbsp chopped onions, 0.5tsp salt, chilli, ginger and lemon juice in a small dish and set aside.


Heat the oil in a heavy, large pan over medium heat. When hot, add remaining onions. Stir and fry until they begin to colour then add tomatoes. Cook for about 5mins until soft, add coriander,cumin and turmeric, cook for 30secs.


Add drained chickpeas and 400ml of the saved liquid, 2tsp salt, the garam masala and cayenne. Stir thoroughly and bring to a simmer. Cover, lower heat and cook gently for 20mins, stir a few times over this period.


Add the saved mixture in dish and stir well. Serve hot or cold. Serves 6.
