Locally reared Longhorn beef at Oxtail & Trotter

This weekend we will have some outstanding Longhorn beef on the counter. This beef is from Jim Hadfield and his family who have a small herd of Longhorn cattle just outside the village of Woore.

Jim keeps his herd on their small holding where the cattle are grazed on traditional pastures for at least 24 months which helps create the beautiful texture and marbling that the Longhorn is famous for.

As usual the beef has been dry aged on the bone at our shop to enhance that flavour even more. Longhorn beef is renowned for its exceptional eating qualities and none more so than by Celebrity chef Heston Blumenthal, who was quoted in The Times:
"The Longhorn has it all for me – the nutty, grassy, blue cheese note that I found in the steaks I ate in New York plus a marvellous moisture and juiciness, alongside a firm but giving texture".

Along with Heston, many other chefs such as John Torrode as well as the Ginger Pig meat book are recognising the superior quality of Longhorn beef. It's not just the steaks that customers rave about, but the mince and casserole steak as well as the joints, such as a forerib on the bone.

So why not pop down to the shop this weekend and ask Simon for a lovely joint for Sunday lunch or a juicy steak for the BBQ.
