Local Rose Veal coming to Oxtail & Trotter

We have sourced some welfare-friendly, local Rose Veal for Oxtail & Trotter.

After a posting on Facebook a couple of months ago asking about whether our customers/ friends would like to try Rose Veal we had some very positive feedback, the majority of people saying that they would like to try some or that they would like to know more about the production techniques before they tried it. So here we go...

This veal is produced at School Farm, Bowers (only 15 miles away from the shop) by Peter & Pip Lowe. The Lowes are a young couple at the start of their farming career and they have recently taken on the tenancy at School Farm. Both Pip & Pete are from farming families and have years of experience between them gained on their respective family farms. Peter explains how the calves are reared:

"Our calves only receive the best care; they are housed in large straw yards in groups of ten and are fed a balanced diet of milk and meal according to their size, and they always have free access to hay and water.

"By rearing dairy bull calves for Veal, these animals are being given a chance to experience life, something they don't always get. Although a Rose Veal Calf is younger at the point it reaches the shop than a typical beef animal, its period of life is similar to the majority of Lambs.

"Usually Rose Veal or British Veal calves are eaten at 7 months of age when they reach around 300kg in weight. This is about the optimum stage to achieve a reasonable size carcass whilst allowing you to still pick up the more subtle flavour and differentiate the colour of the meat compared to beef."

This delicate tasting meat will be on the counter from next Tuesday, 14th May. We will have cuts such as veal escalopes, veal shin (as used to make Osso Buco), Rump Bistro steaks, sirloin steaks and many more.
