On the Second Day of Christmas my true love said to me 'Rich mincemeat'

Ingredients
12 oz chopped raisins
1/3 to ½ pt brandy
12 oz currants
grated rind and juice of 1
8 oz sultanas
unwaxed orange
4 oz chopped mixed peel
grated rind and juice of 1
12 oz chopped apple
unwaxed lemon
1 lb demerara sugar
1 tsp nutmeg
1 lb shredded vegetable suet
½ tsp ground ginger
¼ tsp ground mace
¼ tsp ground cloves

Method
Proportions of fruit may be altered/be approximate according to taste.
Place all ingredients in a large mixing bowl and stir thoroughly.
Leave overnight lightly covered and stir gently next day.
Pot in 1 lb jars and cover in the usual way.
These quantities make 6 lbs.
Best allowed to mature for 1 month but if more apple and no brandy, should only be kept for a week.
If vegetarian suet used then this is suitable for vegetarians.
Not suitable for a diabetic diet.
