Now damsons and cooking apples are readily available. Here is an old Sussex recipe.
Wash the apples and sloice without peeling or coring. Place them and the damsons in a pan and add the water. Simmer gently until the fruit is cooked and soft to be mashed. Strain through a jelly cloth. Allow to drip for several hours, convenient to do so over night.
Weigh the extract and prepare an equal weight of sugar.
Place in a suitable bowl and place in the microwave and heat at full power (800 rating) for about 5 minutes, by which time the extract will be gently boiling.
Now add the sugar and stir in carefully until it is fully dissolved.Reduce the microwave setting to 6 or 700 and run for about 10 minutes. Stir again, test on a cool plate for jelling. Continue for a further 10 minutes if not jelling and test again. Continue until jelling occurs.
Immediately it jells, skim, pour into pre heated jars, cover immediately and allow to cool
