This is a great winter warmer for all the leftovers:
Country Turkey Pie
40g plain flour
1-2 chicken stock cubes
1 tsp Worcester sauce
2 tblsp dry sherry
3 drops tabasco sauce
375g cooked turkey, diced
175g mushrooms, sliced
250g cooked carrots, sliced
250g button onions, boiled
2tblsp chopped parsley
300g ready made puff pastry
beaten egg to glaze
Melt butter in large saucepan, add flour and cook for 1 minute. Add milk a little at a time, stirring constantly, then add crumbled stock cubes and Worcester sauce, season with salt.
Bring to the boil stirring with a wooden spoon until mixture thickens. Stir in sherry and Tabasco sauce. Add turkey, mushrooms, carrots and onions and heat gently through. Stir in chopped parsley then turn into a 1.8 litre pie dish.
Roll out the pastry on a lightly floured board, cover mixture and flute pastry edges. Make small hole in centre of pastry for steam to escape. Bake in preheated oven, 200C (400F), gas mark 6 for about 20 mins, then take out and brush with beaten egg and return to oven for a further 10 mins or until pastry is puffed up and golden brown.
This is also a good way to use up ham and chicken. Enjoy!
