The ADAPT Food Group plan to publish a seasonal recipe every month, putting paper copies in Hoc's Fat Pigeon and sending them to Audlem Online.

ADAPT December recipe: Vegetable Crumble
Serves 6
Ingredients:
600g approx mixed root veg;
1 Large Onion
50g butter
25g Wholemeal flour
225g tomatoes
300ml vegetable stock
150ml milk
3 tbsp chopped parsley
Pinch of mixed herbs
Salt and Black pepper
Topping
100g butter
175g Wholemeal flour
100g strong cheddar cheese grated
50g chopped mixed nuts
2 tbsp sesame seeds

Method
Rub the butter into the flour. Add nuts, sesame seeds and cheese. Peel and chop the vegetables. Melt the butter in a saucepan and gently fry the onion until soft, add veg and cook for 10mins. Add the flour then the rest of the ingredients.

Simmer until veg just tender. Transfer to a casserole dish and cover with the topping. Bake in a medium oven for about 30 minutes until the topping is giolden.The vegetables may be varied according to season.
