This month's ADAPT recipe is from Jane Marshall:

Mushroom and Celeriac Quiche
Pastry6oz/175g flour
30z/75g margarine
1pt/450ml cold water
12oz/350g grated cheese
½ tsp salt
1 tsp paprika
1tsp poppy seeds
Filling1 tblsp veg oil
8oz/225g sliced mushrooms
1 small celeriac peeled & grated
Pinch nutmeg
3 eggs
3oz/175g sour cream
8floz/124ml sour cream
2tsp mixed dried herbs
Salt & pepper

Method
Sieve flour, salt, paprika. Rub fat into flour, stir in water and poppy seeds. Knead, roll out and line flan dish. (9X10)
Place thin layer of cheese on top to prevent it getting soggy.
Lightly sautee mushrooms and celeriac separately. Add mushrooms to dish and sprinkle with nutmeg. Layer with celeriac and top with grated cheese.
Whisk eggs, cream and milk until light and fluffy. Pour over veg, add herbs and seasoning.

Bake 375F/190C/gas 5 for 15mins then 350F/180C/gas4 for 30 minutes and golden brown.
