After we had scooped out the pumpkins and made lanterns and soup out of them I wondered what to do with the seeds. Amongst other things I discovered that they are high in protein, minerals, vitamins and antioxidents. They also contain fatty acids omegas 3, omega 6 and tryptophan which the body converts to serotonin and melatonin, hormones which helps with relaxing and sleeping.

When cool they make a delicious snack or can be zapped in a blender to a fine powder and used as a vegetable stock for soups, sauces etc.
Ed – pumpkin seeds are also very useful in curries.
