ADAPT February recipe

This is the ADAPT Food Group Seasonal recipe for February. Copies are also available from Hoc's Fat Pigeon.

The hens are coming back into lay (hopefully!) this is one of our old standbys:

Egg and Potato Pie
Serves 4

4 eggs
500g potatoes
100g cheddar cheese
1pt milk
2 tbles flour
50g margarine
Salt & pepper

Method:

Hard boil the eggs and cook the potatoes. Slice them both and put alternate layers of potato and egg into a greased casserole dish seasoning each layer. Put milk, marg and flour into a pan and heat to boiling whisking all the while, cook for a few minutes until sauce has thickened.

Mix in half the cheese, pour the sauce over the potatoes and eggs, finish off by sprinkling the rest of the cheese over the top and cook in a hot oven or under the grill until the cheese is golden brown.
