55g unsalted butter
100g chocolate, milk or dark
1 egg
55g granulated sugar
40g light soft brown sugar
½ teaspoon vanilla essence
75g plain flour
Line a baking tray with non stick baking paper
Pre-heat oven to 180 fan (400F)
Melt the butter and chocolate slowly in a pan
Place the sugars,egg and essence in a bowl and use a balloon whisk to combine
Add the chocolate mixture and whisk until smooth
Add the flour and whisk again
Put the bowl into the fridge for 10 minutes to firm
Spoon large teaspoons of the mix onto the baking tray
Cook for 12 – 15 minutes until firm to the touch
Leave to cool for 5 minutes before removing to a wire cooling rack
This makes about 15 – 20 biscuits
These biscuits are easy for children to make (with a little supervision) and will brighten up anyone's day at these interesting times.
