There is never a dull moment at Oxtail and Trotter – this week we have some beautiful Gloucester Old Spot pork and more Wagyu beef on sale.

Gloucester Old Spot pork is extra special for its traditional breed qualities and a big part of the difference lies in the fat. Modern pigs have hardly any fat whether as visible back fat or as marbling within the muscle.

The Old Spot does have a distinct layer of back fat and marbling within the meat. That layer of back fat means that it is hardy enough for outdoor production but it also means that when the meat is cooking, it is being basted in its own fat making the meat succulent and full of flavour.

This pork has been lovingly reared by Neil and Lou Gilmour outside in their lush grassy fields near Calverhall, just 6 miles from the shop.

Wagyu beef again graces our counter this week and continues to be a favorite of everyone who tries it. With its extra special marbling and extreme tenderness it's beef like you've never tasted before. This will be the last now for another month so make sure you don't miss out!
