Venison will be on the counter at Oxtail & Trotter from today.
It is wild fallow deer from the Duke of Westminster's Eaton Estate near Chester.
This flavoursome meat is increasingly in demand due to its low fat content (it contains less fat gram for gram than chicken fillet!) and it can be be substituted for beef in most recipes.
The most popular cuts are venison steaks, haunch of venison and diced venison for stewing. Venison sausages will be made on Monday by the lovely Zoe!
