Continuing with ADAPT's '12 Days of Christmas' recipes:
On the Third Day of Christmas my true love said to me:
Salted Caramel (Confiture de Lait, Dulce de leche)

Ingredients
280g sugar + 140 ml water
30g butter
500ml double cream
2 tsp sea salt flakes
Method
Put the sugar and water in a pan and bring to the boil on a medium heat.
Continue boiling until it starts to go light brown.
Every now and then brush the outside of the pan with cold water to avoid burning.
Remove from heat and leave to cool for 5 mins.
In another pan bring the cream to the boil.
Gently stir the hot cream into the sugar mixture, bring back to the boil and add the butter and salt. Stir well and then pot as you would jam.
Can be spread on bread, used in cakes or on ice cream or just eaten sparingly with a spoon!
