From 8.30 this morning, the wait for Audlem to have its very own butchers shop again will be over.


Meat eaters locally and Audlem's many visitors – and, indeed, anyone who believes in high quality local shops – will be delighted with what they find as they shop at Oxtail & Trotter in Cheshire Street for the first time.


Even better, their meat is sourced very locally – the beef from their own farm a mile away; similarly with lamb, while the shop's pork supplier is only a short distance away.


The meat range is temptingly sumptuous and beautifully displayed with fine cuts of meat, sausages, burgers, bacon, pies, sausage rolls and so much more.


The shop and cold store has been completely renovated by proprietors and local farmers Hugh & Kate Pocock, seen here with butcher Simon (centre), who has 40 years experience in the trade.


Speciality suppliers include Smoke & Pickle of Shropshire which produces  a fine range of sauces, curries and soups.


The Kitchens Fine Food Co offers a fantastic range of Artisan pickles, chutneys and jams made, jarred and labelled by hand in small batches.


Both suppliers will be at Oxtail & Trotter tomorrow, Saturday 28th July, doing tastings of their products while there will be the shop's sausages to sample too.


Last night, recalling all the planning and hard work that had gone into Oxtail & Trotter, Hugh was grateful for all the support from their family and friends over recent months.


He also thanked his new neighbours in Cheshire Street for all their help and understanding as renovation and fitting out work was completed. 


Many of those running Audlem's shops visited Oxtail & Trotter last night to welcome the new members of the local business community and to wish them well.
