We have had a great start at Oxtail & Trotter since our opening on 27th July! Thank you to all of our lovely customers for making the experience so rewarding and exciting.
Simon, Hugh and I have enjoyed meeting all of you on a regular basis and are continually listening to your feedback and trying to make sure we get the best quality meat in our shop.
We now have a few new faces in the shop who you may have already met – Zoe (Sausage maker extraordinaire!) who helps out on a Monday and Friday and Hollie (our Saturday Saviour!)...a real foodie who is great at getting the sausages on the BBQ on a Saturday to make sure you all get a taster of our different flavoured sausages.
#Apprentice wanted
We are currently looking to recruit an apprentice to work alongside our small team. If you know anyone who would like to learn this highly skilled trade and carve out a successful career in the beautiful village of Audlem please send them our way!
#Our lamb
The lambs we rear at home nr Calverhall are mostly of the Lleyn breed (from the Lleyn Peninsula, N Wales Coast), we chose this breed because they are easy care and they produce a consistent carcase quality with maximum efficiency.
The Lleyn ewes are crossed with a Charolais ram which gives the lambs a sweeter taste. We do not rush the finishing of our lamb and the breed suits our farming ethos.
The sheep graze all year on our 20 acres at Boundary Farm, this is farmed in line with Higher Level Stewardship principles which aims to deliver significant environmental benefits in priority areas including agreements on wildlife, landscape management and the historic environment.

#Prize Draw
We are delighted to announce that the winner of the prize draw that you all entered during our opening month was won by Mrs Val Huntbach from Audlem. Congratulations Val, hope you enjoyed your Oxtail & Trotter goodies!
#Christmas orders
We will be taking Christmas orders from October. Hugh and I have been busy sourcing exceptional beef and researching the tastiest and most local turkeys for you to serve to your friends and family over the festive period!
