VEGETARIAN APPLE AND LENTIL PATE
4oz Puy Lentils
½ pint water
1 bayleaf
1 really large Bramley apple
4 tbls olive oil
2 leeks, finely chopped
2 tbls tahini
Freshly ground pepper and salt to taste
Bring to the boil seasoned lentils/water and bayleaf.
Simmer gently for 1 hr until tender
Remove the bayleaf and mash the lentils well
Whilst the lentils are cooking, peel, core and finely chop the apples and leeks
Heat the oil adding leeks and apples, cover, gently cooking until soft, then mash
Add the lentils and tahini to the apple and leeks mixing well
Put into 4 dishes and chill until firm
