On the First Day of Christmas my true love said to me 'Fletcher Stuffing'

This stuffing is more of an accompaniment as you don't actually stuff it in the bird, so can be used to accompany anything ie. nut roast.

It is also a good store cupboard stuffing as if you don't have an ingredient you don't add it!

There is no amounts, I use a small onion and two slices of bread and two tablespoons of oil to make enough stuffing for the two of us.

Method
Fry a finely chopped onion, a stick of chopped celery, chopped pepper, mushrooms, and garlic in a good amount of oil or fat (bacon fat is nice).
When cooked but not brown add parsley, sage, pepper, cook for another minute.
Add some cubed bread (I cut the crusts off, and cut into about 1/4in cubes).
Fry for a min till the oil has been soaked up.
Put into an oven proof dish and add to the oven for the last 15min of your meals cooking time to crisp up.

This is one of my father's recipes and has been part of our Sunday meal since I can't remember.
