ADAPT's 9th Recipe of Christmas

On the Ninth day of Christmas my true love said to me "Veggie Sausage Rolls"

Ingredients
150g red lentils
100 chopped mixed nuts
100g breadcrumbs
100g mushrooms finely chopped
1 onion finely chopped
1 clove garlic finely chopped
2 tsp chopped herbs (I used sage and parsley)
1 egg
Salt and pepper
Olive oil
500g Flaky or rough puff pastry

Method
Fry onion and garlic in oil for a few minutes then add mushrooms.
When they are soft add all the all the other ingredients and season.
Roll the pastry out and spread sausage mix along the length in a cylinder shape, leaving a 1cm edge, brush edge with water.
Tightly roll the pastry around the sausage mix and secure.
Use a sharp knife to cut the roll from the rest of the pastry. Cut into small pieces and place on a baking sheet. 
Repeat with the rest of the mix and pastry.
Bake at 250degrees C until golden brown.
