On the Eighth Day of Christmas my true love said to me "Flemish Cake"

Ingredients
4 oz Butter (or margarine)
2 oz Demerara sugar
2 Free range eggs beaten
5 oz Wholemeal self raising
8 oz Mincemeat
1 tbsp Water
Method
Cream the butter and sugar.
Beat in the eggs a little at a time
Fold in the flour
Fold in the mincemeat and water
Bake in a greased 8" square shallow cake tin at 170C/Mark 3
