The ADAPT Food Group's recipe for May is great for picnics,tea parties and treats.

Overnight Cake450g Self Raising Flour 225g Sugar 225g Margarine 2 tsp Bicarbonate of Soda ½ tsp Nutmeg 450g Mixed Fruit ½ tsp Mixed Spice 1 pint of Milk

Mix flour, marg, sugar and bicarb into crumbs. Add fruit, spices and milk, stir well.

Cover and leave overnight, put into 3 x 1lb loaf tins lined with greaseproof paper.

Bake in a slow oven 100-120c for approximately two to two and a half hours. Leave to cool
in tin. Ready to eat, but best left for a week or so in an airtight container.
