Last year the French beans were fantastic – I bought 'Cobra' from the ADAPT stall about 10" long and hope to grow my own this year. In anticipation of more hot days here is the August recipe:

French Bean Salad

Make a sauce vinaigrette by dissolving a pinch of salt in a teaspoon of white wine vinegar, add a crushed clove of garlic and then 2 tablespoons of good olive oil (it is worth using extra virgin oil when it is not to be cooked).

Top and tail the beans then cut into 2" lengths and put into pot of boiling water for just 2-3 minutes, they should be al dente, not soft.

Toss the hot beans in the vinaigrette when they will soak it up and serve warm or cold.

PS Don't be put off by the purple beans you sometimes see – they look green when they are cooked!
