Elderflower Wine
Ingredients
Gather flowers on a sunny day, trim from the stems until you have 1 pint. Pour boiling water over flowers and lemon rind, add sugar, raisins and lemon juice. When cool add yeast tannin and nutrient.
Cover and leave to ferment for 4-5 days, strain into demi john and fit airlock. When the ferment has finished and the wine clears rack off and bottle.
