AudlemOnline received this very encouraging email on Wednesday from Donna Robinson which will delight all who have been worried about how long the Shroppie Fly would be closed. It says:

"Hello Audlem!! How beautiful Audlem looked today as I drove through the village to meet the design team at The Shroppie Fly. I am so thrilled and excited to tell you that we will be opening the pub very soon!

"I am the new licensee, landlady, call me what you wish and the plan is to have the pub open ready for Easter (fingers crossed). I am very keen to keep the traditions of the pub, real ale, honest home made food and live music, and so to achieve all of this I need to start networking to attract some pretty good staff. Please can you help?"

AudlemOnline has now had a long chat with Donna who is clearly determined to make the Shroppie a huge success and a credit to the village. It is, after all, one of the most famous pubs on the canal network and well-known to many thousands of boaters, walkers, cyclists and visitors to Audlem and a key part of the local tourist trade.

While this will be her first pub as licensee, she loves pubs and has worked in them ever since it was legal to work! She is a great enthusiast for cask ales too and loves live music. Living in Manchester, she was delighted to hear about the local music scene and the number of bands and performers from her home city who perform here at the Festival and throughout the year.

Donna is now working with the designers from Punch Taverns on the refurbishment. She will also be looking for staff both behind the bar and in the kitchen. Here are details about a key post which also says much about how the pub is to be developed:

Experienced Chef/Cook:

The Shroppie Fly is about to re-open its doors in time for Easter. The refurbishment, which will be in keeping with the pub's quirky feel, will reflect our beloved traditions and will promote local produce, locally brewed ales as well as host your favourite live music and popular annual events.  

Our menu will consist of home made, traditional favourites, using locally sourced ingredients. I hope you will share my annoyance at the cloning of menus across our pubs, controlled and governed by National food distribution firms. I hope you will agree that five fresh items on a menu cooked well is better than 25 frozen items.

With this philosophy for fresh, locally sourced, home made food, I am passionate about finding the right talent for The Shroppie Fly. It is essential that you can make up a hearty stew from scratch, even roll out some pastry for our very special "Pie at The Fly". If you can bake a cake, then even better! Essentially you may not be a qualified Chef, you may be an experienced pub Cook or perhaps someone who has cooked for a Fire Brigade or similar.

You will need to be well organized, great at developing those around you and able to manage ordering and stock control. The role will be very busy, yet rewarding as you will be integral to launching The Fly and returning it back to the village. You will have autonomy to menu design and plan specials, cater for large events and introduce your own stamp on the food.

This role will work closely with a hands on Landlady and be part of a brand new team. Various training modules are provided in conjunction with Punch Taverns to develop your skills. The ability to work weekends, bank holidays and some evenings is essential, various shifts are available.
