Store Cupboard Kedgeree

This is not a traditional kedgeree recipe, it is moister and doesn't have curry powder added but there is nothing to say you can't add some if you want.

For four people you need

  • 220g rice cooked
  • A large tin salmon or tuna or a portion of smoked haddock/cod cooked
  • 4 hard boiled eggs
  • Tin cream of mushroom condensed soup
  • Half the can milk
  • Parsley
  • Salt and pepper
  • Breadcrumbs
  • A knob of butter

In a oven proof dish put the rice, fish, and cut up hard boiled eggs, parsley, the soup and milk. Add salt and pepper to taste. Mix well. Flatten the top, cover with breadcrumbs and dot with butter. Cook in a hot oven 200 degrees, for about 20 minutes or until hot all the way through.
