The July recipe is a bit late but I had ten courgettes in my fridge this morning and a kind neighbour lent me a book 'Cooking with Courgettes' by Marie Fougere which had this simple recipe in and will make a change from all the recipes with tomatoes and basil:

Ingredients
4 medium courgettes
100g cheese thinly sliced or grated
olive oil

Method
Trim wash and slice the courgettes thinly.
Use a pastry bush to oil an oven proof dish.
Put down a layer of courgette and then some cheese – Cheddar is fine or Edam etc.
Carry on layering until the dish is full.
Bake at 220C for approx 30 mins and serve hot with crisp lettuce.

I see no reason why you shouldn't also put a layer of sliced onions in this dish.

Last year I planted my courgettes in old tyres (the garages are happy to give them away as they have to pay to dispose of them) filled with compost from our bins. This year I have put another tyre on top of each this gives them more root room and keeps them off the ground, with four plants they are keeping me busy!

Gardening tip picked up yesterday at the ADAPT stall – when Jerusalem artichoke plants reach 5ft cut the tops off so that they concentrate on the tubers below!
