EGG AND POTATO PIE

A good friend gave us this recipe back in the 70s when I was on my practical year working on the college farms. We lived in a tied cottage and had free milk and potatoes and kept hens so this was a very economical dish!

Ingredients (serves 4):

  • 6 eggs – not too fresh
  • 4 large potatoes
  • 1 oz butter
  • 1 pint milk
  • 1 oz flour
  • 8 oz cheddar cheese, grated

Scrub and slice the potatoes and boil until just tender, drain.

Hard boil the eggs, shell and slice. (they shell more easily if they are not very fresh).

Make up a white sauce by heating the milk, butter and flour, stirring all the time until it thickens.

Layer the sliced potato, egg and ¾ of the cheese in a dish ending with potato, seasoning with salt and pepper as you go. Pour over the sauce and top with the remainder of the cheese.

Brown under the grill.

Serve with vegetables or salad. For a variation add some crispy bacon in the layers and topping
