Braised Oxtail

Yes — Oxtail and Trotter does sell oxtails! If you have never tried them it is one of the tastiest dishes ever.

One oxtail serves 4 people, there is a lot of bone and finger licking so provide napkins! The Pressure cooker for 40mins on high pressure is best but failing that 3-4 hours slow simmering will be fine.


  • 1 Oxtail jointed
  • Fat for frying
  • Onion, carrot, turnip or swede, celery as liked-chopped up
  • Bouquet Garni
  • Stock cubes
  • Water to cover-about 1 litre?
  • Plain flour to coat pieces and to thicken sauce
  • Salt and pepper as required
  • 1 tbs redcurrant jelly optional
  • Glass of port or red wine optional (but good!)

Heat the fat in the pan to be used and coat the pieces with flour, start frying the onion and add the pieces and fry until golden brown, add the vegetables, herbs, water and stock cube and cook.

When cooked separate the juices and thicken adding the jelly and wine if required. Remove the bouquet garni. Put together again and check hot.
