April is usually the month when the asparagus harvest begins.Let's hope the weather hasn't caused much of a disruption this year! As with all veg, make sure the asparagus is fresh and firm if buying.
Bunch of Asparagus
150g short crust pastry
75g grated Cheddar cheese
3 free range eggs
150ml single cream
1/4 tsp dry mustard
Salt and pepper
Simmer or steam asparagus for between 4-8 mins depending on thickness. Drain and put to one side.
Line a 7" flan case with pastry, arrange asparagus on top.
Put all other ingredients in liquidiser or beat very well by hand.
Pour mixture over asparagus and bake in moderate oven until centre is set.
Great hot or cold.
